How to peel a hard-boiled egg?

Does anyone know the best way to peel a hard-boiled egg? When I do it, most of the eggwhite comes off with the shell. Thanks for any suggestions you can give me.
 
Hi! I have found that if you make sure that your eggs are cooled before you try to peel them, that the shells usually come right off. After, I cook them, I drain out the hot water and replace the water in the pot with cold water and let them cool (You can put this in the refrigerator, also to help cool them down faster). After they have had a little bit of time to cool, I hit the shells with a butterknife and the shells usually crack and peel off pretty easy. I hope this will help. :wave:
 
I agree with TurtlePowrd. Only I add ice cubes to my cold water. Seems to work just fine for me.
 
I learned this from Alton Brown on teh Food Network. To boil eggs, you put the cold eggs into salted cold water (enough to just cover them), then bring the whole thing to boiling with a cover on the pan. Once it's at a rolling boil, turn off the stove and turn the timer on for 10 minutes. When it dings, put the eggs into an ice water bath. Leave them in there only a short time (maybe 1 minute) and they will peel like magic.

I love Alton Brown and I never fail to learn something on his show, even something like this!
 
I hate peeling eggs but, I've learned to just cool them in cold water and then roll them in my hands. It seems much easier than trying to peel them any other way.
 
The older the egg is, the easier the shell comes off. Has to do with protein breakdown. The cheap generic eggs are generally a lot older than the more expensive eggs (such as Eggland's best, which are usually painfully fresh). If you're going to be boiling eggs, and want the shell to come off easily, get the stale store brand ones.
Remember, if they explode and release noxious gas, they are TOO old.

I remember the trick where you poke a small hole on one side and then a little bigger hole on the other side and then you blow the egg out of the shell lol.
 
Thank you for your suggestions. I'll try them and see if it works for me. I also like Alton Brown. He's funny and his show is very infomative.
