Back To School Dinner Ideas

Like most people with children, we are constantly on the go. My boys are both in football and basketball. Of course, they never have practices at the same time. So we are usually eating in shifts this time of year. If anyone has any suggestions for easy dinner ideas I would be grateful. Thanks in advance. (Yes, I do have a crockpot which I love to use)

I just did something easy on sunday...

1 1/2pound (almost 2 pound) pork lion
4 Carrots (thinly sliced)
Celery Stalk (Chopped)
4 Medium Potatoes (diced well)

put items in a baking pan (i used one of those aluminum 13x9), add 2 1/2 cups of water. 1 packet of your favorite crock pot seasoning packets and 1 packet of brown gravy. (I made a pot of rice to have also). Bake for 2-3 hours

It was delicious.

TV dinners  sorry I just had to do that. I really don't have any easy ideas accept throwing it all in one pan and see what you can create. I use leftover chicken frozen veggies and instant rice and just mix it all together.

I make up subs and freeze them. I pull them out when I need and as many as I need. I also make up a boatload of homeade veggie soup with shredded beef(or chicken noodle with shredded chicken) and divvy that up into freezeable containers. I can pull those out at will also. The shredded meat I buy is in a can. It will run you around $6-7 a can.

My kids love salisbury steak so we buy the Banquet kind. I'll make that with a baked potato and a veggie. Stouffer's makes a killer lasagna! I swear it tastes just like the one I make from scratch and it's cheaper. Serve with a salad and some french or garlic bread.

Tonight I sliced up a $4 piece of Jenny-O turkey ham and cooked it on the stove. Took me 10 minutes for 8, good sized pieces. Made a $1 box of 4-cheese mashed potatoes, 2 cans of gravy, and 3 cans of green beans. Cost me $7.50

well, last night was pork chops and today I have a pork roast in the crockpot for pork BBQ sandwiches. Thanks for the ideas.

mmmm.... sounds sooo good... i love pork sandwiches.....

Here's another one for the crockpot:

Easy pot roast with beef broth and Italian salad dressing mix.
Ingredients:
1 boneless pot roast, about 3 to 4 pounds
1 pkg. au jus mix (about 1 oz)
1 pkg. Good Seasons Italian salad dressing mix (1/2 ounce)
1 (10.5 oz.) can beef broth
1/2 soup can water
Preparation:
Place roast in slow cooker. Combine remaining ingredients and pour over beef. Cover and cook on low for 9 to 11 hours, until beef is tender.

lol jerzee64, I was going to suggest an easy pork chop meal:

Whatever fits in your pan (4 - 6 but not too thin) brown them quickly on higher (med high), turn down the heat (low) and add a jar (or 2 ) of salsa, then cover with cheese (I use cheddar) and let simmer for about 10 minutes.

Fast, easy, and DELICIUOS, and I used to DETEST pork chops until I tried this!!!

Just thought of another dinner idea...homemade pizza! You can buy the dough already prepared, but we make our own and it's almost just as fast. The kids have fun topping their own pizza and it's healthy! :sunny:
