Hunting season sucks

My dh is a hunter and he went out early this morning to hunt. He killed a buck which is hanging in the backyard draining to be prepared. I love deer, I couldn't kill one if I tried. Everyone here in MS. loves venison and dh wants to help family and friends fill up the freezers for the winter time and help those having a hard time financially. That is one good thing about my dh and his family, they don't hunt for sport and eat what they do kill.

I guess I should start going through some online recipes, I am new at fixing venison as of last season. I don't really care for it myself, it's too wild for my taste. Any other hunters here?
 
I'm a veg, and not particularly in favor of hunting, but if you're going to eat the meat, and deer are in need of population control...by all means. What I strongly oppose are hunters who kill animals simply for sport and don't care about populations, introducing lead shot to the environment and birds, etc.

As to recipes, I'd imagine anything geared for lamb might be appropriate. My old copy of The Joy of Cooking has recipes for everything from Bear to Squirrel! :laughing: I should think an online search would come up with lots of options. That's great that your husband is sharing food with those in need. I hope we all remember to do that whenever possible! Happy Thanksgiving!
 
A friend's husband is a butcher and has his own attached shop for processing the hunter's meat. I have the stuff on several occasions even other things like grouse, and none of it tastes good to me. It's just too gamey for my taste.

I agree about the taste. My dad hunts and the only thing I could ever stomach was the deer jerky he had made. Other than that...no thanks.
 
I love deer and if you soak the meat it gets that game taste out. We mix it with Pork and make all kinds of dishes with it. Happy hunting guys be safe.
 
I grew up eating venison and anything else you can hunt and I love it all(except for duck)...I would rather eat deer meat than beef anyday of the week, and pheasant is way better than chicken...my best friend's family were big hunters and they cooked whatever they caught and if you wanted to eat you didnt ask what it was LOL...with them I have eaten Moose, bear, mountain lion, snake...and probably many other things...thankfully I was not a picky eater when I was growing up!

Today my dad, brother and uncles spent most of the day making deer jerkey....cant wait until it is done it is the best :)
 
:sunny: I have cooked and eaten lots of wild game including venison. Alot depends on the area where the deer was hunted. When I lived in Michigan the deer we shot on the farm tasted like beef as they ate alot of corn. The deer we would get from the UP of Michigan were awful, tasted like what they ate - pines. That meat we would make into jerky, slim jims and summer sausage. Venison roasts in the crockpot are wonderful. Pour a can of spaghetti sauce or a can or beer or Coke Sweepstakes and slow cook all day and you will have a yummy supper. There are lots of recipes on the internet.
 
I use it in chilli and spaghetti. I use half hamburger and half deer meat. I don't think anyone ever even notices. It's very lean and hey - if you kill it you really should eat it!
 
I would have replied sooner but, my phone service went out since yesterday afternoon until an hour ago or so. Talk about withdrawls!!

He gave most of the meat away yesterday and cut some up to freeze here. We don't have much freezer room right now so I stuffed what bags I could in there. I have a couple bags I marked as "roast", one as "steaks", one as "stew meat" and there are a couple I didn't mark, will figure it out later.

I know I am suppose to soak it in salt water overnight but, it's still wild. Now, I watched dh's aunt make some BBQ shredded deer once, it was actually really good. I might try that sometime. Last time I tried to make stew (last year) it was still really tough.

He just went out to hunt again. I wish he would hunt for turkeys but, he hasn't yet. Just for deer.

I heard if you soaked it in milk it would take the gamey flavor out. Does salt water work too?

I have heard that but, I really would hate to waste the milk since its a precious commodity here (so expensive!). I have a couple roasts boiling right now, I want to experiment with BBQ venison. I soaked it in salt water all night long.
 
Hubby has a venison cookbook but has some great tips for preparing venison so it's not as tough/gamey. I'll try and pull that out and type them up when I'm off work the next couple of days.

Yep, I too am a hunter's widow this time of year (between hunting and finals, I'm not seeing too much of my DH lately)! :)

I made the BBQ shredded venison last night. I boiled it for about 3 1/2-4 hours until it was easy to shred and tender and then added the BBQ sauce and put it in the oven while I finished cooking the side dishes. It was "ok". My husband and son liked it but, I wasn't crazy about it. I don't think it even tasted close to what his aunt made, I will have to ask her what I did wrong. It might have just been the type of BBQ sauce I used.

At least during hunting season you could fill your freezer without spending a ton of money to do it! My mom is coming out next month around the 13th. She said we should make a menu of what we will eat while she is here. I told her I could make a menu right now with what is in my kitchen but, almost 3 weeks from now? I don't know what I will have then. I did tell her that I can just about garantee that there will be venison in there *laugh*.
 
:wave:We just had a deer roast for supper tonight. My hubby is a big hunter also already filled one freezer and hopefully will fill the other before season is over. We cut up our own deer mostly into roasts and ground deer which we mix with hamburger and sausage. I use it in everything from spaghetti to hamburger helper. My favorite (and my hubbys) is adding onion soup mix and a dash of garlic powder (helps with the "gamey" taste), in a slow-cooker all day. MMMMmmmm yummy and tender! :headbang:
